Ingredients

  • Elvio’s Chimi Rub
  • Hatchup
  • 1.5 Lb. skirt steak (about 1/2" thick)
  • Sea salt and freshly ground black pepper
  • 1 Egg

Directions

  1. Coat steak in Chimi Rub. Let the steak sit at room temperature for 30 minutes (this helps with even cooking). Pat dry with paper towels.

  2. Grill on high 3-4 minutes per side until meat is nicely charred and medium-rare.

  3. Transfer steak to a carving board; let rest for 5-10 minutes.

  4. Serve with sunny side up fried eggs and hatchup!
