Pepperoni & Mozza Grilled Cheese

Vermont Smoke & Cure Pepperoni, sliced thin
2 slices whole grain bread
2 tbsp. butter, softened
shredded mozzarella
fresh basil


1. Butter one side of each slice of bread. On the non buttered side, layer in sequence mozzarella, pepperoni, basil, mozzarella.

2. Grill buttered side down on a skillet heated over medium heat for until golden brown and cheese is melted.

Pro Tip: You can add a little grated parmesan or asiago to the pan before the final turn on the grilled cheese to get a nice crust, just be careful not to burn!
