This one-pan, easy weeknight dinner gets woken up by Spain's answer to pesto aka  Romesco sauce. 

Ingredients

  • 2 4-ounces filets of firm fish like halibut, cod or salmon

  • Victoria Amory Romesco
  • 1 Lemon
  • Sea Salt
  • Sliced onions and whole cherry tomatoes to bake alongside fish

Directions

  1. Preheat the oven to 400 degrees
  2. Arrange the fish, onions, sliced lemons and cherry tomatoes on a baking sheet, drizzle with a little olive oil and sprinkle with salt and pepper.
  3. Roast the fish for 8-10 minutes, depending on the thickness of the fish, about 10 minutes for 1-inch thickness. You will know the fish is done when it is opaque and can be flaked with a fork. Top each piece of fish with Romesco Sauce and serve.
