Baked Fish With Romesco

2 4-ounces filets of firm fish like halibut, cod or salmon
Victoria Amory Romesco
1 Lemon
Sea Salt
Sliced onions and whole cherry tomatoes to bake alongside fish


  1. Preheat the oven to 400 degrees

  2. Arrange the fish, onions, sliced lemons and cherry tomatoes on a baking sheet, drizzle with a little olive oil and sprinkle with salt and pepper.

  3. Roast the fish for 8-10 minutes, depending on the thickness of the fish, about 10 minutes for 1-inch thickness. You will know the fish is done when it is opaque and can be flaked with a fork. Top each piece of fish with Romesco Sauce and serve
